None of us are the same in time availability and love of cooking, so don't be shy. Please share your summertime recipes and if you don't cook much in the summer and instead prefer to each fresh fruit and veggies, please share that too. This blog is at least as much about getting to know each other as it is sharing recipes....which is the closest I can come to to being invited to your place for the evening.

Spinach Strawberry Salad
& Poppyseed Dressing
Ingredients:
Feeds: 8 generous servings
Salad:
· 1 bag washed spinach
· 1 head romaine lettuce
· 1 lb. strawberries sliced (works with less)
· 1 bag chocolate covered Heath Bits (only used a small portion)
Dressing:
· 1/2 cup light mayonnaise (Heilmans has the best flavor)
· 1/4 cup milk (adjust to preferred consistency)
· 1/4 cup sugar (more or less to taste)
· 1/4 tsp. salt
· 1/2 tsp yellow mustard
· 1 Tbsp. rice vinegar
· 1 1/2 tsp. poppy seeds
Directions:
· Mix the greens.
· Just before serving toss in the strawberries, dressing, and Heath Bits.
Black Bean Salsa aka Cowboy Caviar served with tortilla Chips
Corn Chips
1 15 oz. Cans of black beans, rinsed and drained 1 cup frozen corn kernels or one can corn, drained one large tomatoe, chopped ½ bunch cilantro, diced finely 8 green onions or 1/2 Cup purple onion chopped fine 4 Tbl. Fresh lime juice 2 Tbl. Balsamic vinegar ½ teas salt; pepper to taste. Optional: I clove garlic; 1/2 tsp ground cumin; add more salt Mix together & serve with Corn tortilla chips |
