Janelle's Mother's Day Meal
Cajun Chicken Alfredo
Ingredients
- 4 (5-ounce) boneless, skinless chicken breasts
- 1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons minced garlic
- 1 cup roughly chopped marinated sun-dried tomatoes
- 1/4 cup white wine ( I use Chicken stock -J)
- 3 cups heavy cream
- 3/4 cup grated Parmesan
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 pound cooked fettuccine
- 1/2 cup sliced scallions ( I omitted)
Directions
Preheat the oven to 350 degrees F.
Dredge the chicken breasts in the blackening spice and place in a
cast iron skillet over very high heat. Blacken both sides of the chicken
and place in the oven for 10 minutes, or until internal temperature of
chicken reaches 165 degrees F on an instant-read thermometer. Slice in
strips on the bias and set aside.In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

Easy Pineapple Upside Down Cake

About This Recipe
"An easy pineapple upside-down cake using a yellow cake mix."Ingredients
- 1 (18 ounce) boxes yellow cake mix *Duncan Hines Is the Best-J
- 3 eggs ( or as called for by your cake mix)
- 1/3 cup oil ( or as called for by your cake mix)
- 1 1/3 cups water ( or as called for by your cake mix)*I use some of the pinneapple Juice!-J
- 1 cup dark brown sugar
- 1/4-1/2 cup butter
- 1 (20 ounce) cans sliced pineapple* I prefer crushed-J
- 1 (8 ounce) jars maraschino cherries (optional)
- halved walnuts (optional)
Directions
- Follow instructions on cake box for making an oblong single layer cake.
- Prepare cake batter and set aside.
- Cut up butter in small pieces and place all over the bottom of the oblong pan specified on cake box.
- Sprinkle brown sugar generously over the butter. *I do step 3&4 in a pot and add chopped walnuts
- Place pan on the stove (or in the oven) and heat slowly until butter and sugar melt to a liquid then remove from heat.
- Evenly space the pineapple slices around the bottom of pan in the heated sugar and butter.
- Place the cherries and nuts between the pineapple slices (The cherries and nuts look nice and taste great, they are optional).
- Pour cake batter on top of the pineapple/cherry/nut mixture.
- Place in oven and bake as directed on cake box.
- As soon as cake is done place a plate over the cake and turn upside down and carefully remove pan.
- If you wait too long the sugar will harden and be difficult to remove.
Bear with me you guys because I'm still learning how to blog. I wanted to personalize the recipes I shared but I couldn't figure out how to format it and it was being all funky so I figured I'd just share it in the comment section. This Chicken Fettuccine Alfredo recipe is something I made to treat myself the first Mother's Day after Taylum was born. Lou had to work that Sunday so I thought I'd make my most favorite meal Chicken Fettuccine. Seriously if I ever have to have a last meal, it would be this dish and dessert would be chocolate cake,Krispy Creme donuts or brownies, it would be a toss up. This is the only thing I ever order from Olive Garden because I love it! And this recipe did not disappoint. I get so excited when I find a recipe that tastes just as good as a restaurants makes it. Now until this meal I had previously tried canned versions and the milk combined w/cheese and butter versions. Come to find out the hidden gem for making really tasty restaurant quality Alfredo sauce is HEAVY CREAM. Now this is something I next to never buy because its so unhealthy but on a day to celebrate being a MOM it's worth it! I haven't made this since that Mother's Day because I try to eat somewhat healthy but yes this year Lou is making me this delicious dish because I've been going to the gym! =) Now to my dessert. I want to establish certain traditions with my kids and I decided last year that every Mother's Day in the Scichilone household will be celebrated with Pineapple Upside Down Cake. Why you ask, because every other special occasion we celebrate consists of White Cake with Buttercream (Lou's Favorite) or a Chocolate Cake with Chocolate Frosting (My favorite.) So when May comes around it's hot outside I want a cake that is somewhat little and includes fruit (I love strawberry shortcake but we think Chas is allergic to Strawberries!) So now you know what my family will be eating come this Mother Day! Salute! ~Janelle
